Slice the red cabbage into fine strips. Make a packet of the spices, so that you can easily remove them from the cabbage once cooking is complete. A tea infuser works well for this.
Melt the butter in a large saucepan or casserole, and sauté the red cabbage for a few minutes. Lower the heat and add the sugar, red wine vinegar, 3 cinnamon sticks and the packet of spices.
Place the lid on the pan and let it simmer for 45 minutes. Stir well every now and then. Meanwhile, peel the apples and dice them.
After 45 minutes, add the apples to the pan and cook for another half hour. Season the braised red cabbage with salt and pepper. Taste and add some extra ground cinnamon if desired.
Remove the spice package from the red cabbage after cooking. Serve immediately. Enjoy your meal!
