Carpaccio rolls are easy to make and with a filling which includes sun-dried tomatoes, absolutely full of flavour. A festive snack for Christmas time.
You can buy the carpaccio pre-cut, or have the butcher slice beef fillet thinly for you. To elegantly slice the beef yourself, you can freeze it first. It is then easy to thinly slice the fillet with a meat slicer or chef's knife.
Brushing the courgette with the oil from the sun-dried tomatoes instead of olive oil makes the carpaccio rolls really tasty.

Top and tail the courgette and cut it into long, thin slices.
Heat a griddle pan over a high heat and use a brush to baste the courgette slices with oil from the sun-dried tomatoes.
Grill the courgette on both sides until a grill pattern is visible, then sprinkle with salt and pepper.
Toast the pine nuts briefly in a small frying pan, without any oil or butter.
If necessary, wash the rocket and remove any excess water with a salad spinner. Cut the sun-dried tomatoes into small pieces.
Place a slice of carpaccio on a chopping board and top this with a slice of griddled courgette.
Place a little rocket, some sun-dried tomato, pine nuts and grated cheese in the middle. Roll up tightly, then repeat for the remaining carpaccio rolls. Season with salt, pepper and a little extra Parmesan cheese. Enjoy!
What is carpaccio?
Carpaccio means “thinly sliced”, and it usually refers to a cold Italian starter. The classic carpaccio is made from thinly sliced raw beef, which can be beef fillet or sirloin/tenderloin.
Is carpaccio healthy?
Red meat contains proteins, vitamins, and minerals. It has a high level of iron. Red meat is low in fat, but eating too much of it is not considered to be a healthy choice.
