This vegetarian carrot and goat cheese quiche is full of flavor thanks to the caramelization of the carrots and delicious sage.
This carrot and goat cheese quiche also goes very well with arugula and raw ham, but it is still a tasty savory pie without them.
Preferably use soft goat cheese so you can easily stir it for the filling. However, you can also use a slightly firmer goat cheese cut into pieces in the filling.

Start by making the quiche dough; you can also use a roll of ready-made dough.
Peel the carrots and cut them into thin slices.
Heat a splash of olive oil in a large frying pan and fry the carrots for about 10 minutes. Stir regularly to prevent the carrots from burning.
Add 4 tablespoons of honey and cook for another 5 minutes so the carrots start to caramelize. Season with pepper and salt.
Meanwhile, grease a quiche dish with butter and preheat the oven to 190 degrees Celsius.

Transfer the dough to the quiche dish and poke holes in the bottom.
Place a sheet of baking paper on the dough and fill it with pie weights. Bake the quiche crust for 5 to 10 minutes in the oven, until the crust is almost cooked.
Meanwhile, beat the eggs together with 100 grams of goat cheese and 200 ml of cream. Finely chop the sage and add it along with pepper and salt.

Remove the pie weights and baking paper and distribute the carrots over the bottom.
Pour the cream mixture over the carrots and sprinkle the remaining 75 grams of goat cheese on top.
Bake the carrot and goat cheese quiche until cooked and golden brown for about 45 minutes. The exact baking time depends on the oven and the thickness of the carrot slices.
For a vegetarian version, serve only with arugula, or for a non-vegetarian quiche, add a few slices of raw ham. Enjoy!
What dough for a quiche?
The base for a quiche is usually made from a crumbly shortcrust pastry, which you can easily make yourself. You can also buy it ready-made, or use puff pastry.
My carrot is not cooked, what now?
Make sure the carrot is already slightly cooked during frying in the pan, as it will not cook enough in the quiche.
