Preheat the oven to 200 degrees celsius. Clean the cauliflower and cut it into small florets. Slice the onion into rings. Bring a medium saucepan of water to the boil and cook the cauliflower florets for 5 minutes.
Drain the cauliflower florets and leave to cool. Cut the ham into thin strips and finely chop the fresh chives. Add the egg and milk to a bowl and whisk together. Add the grated cheese and mix again until well combined.
Add a pinch of salt, some pepper and half a tablespoon of grated nutmeg. Transfer the cauliflower florets to an oven dish. Pour the egg and milk mixture over the cauliflower.
Add the strips of ham, the potato slices and the sliced onion to the baking dish.
Bake the cauliflower dish in the preheated oven at 200 degrees celsius for 35 to 40 minutes until golden brown and cooked through. Garnish with the chopped fresh chives. Enjoy your meal!
