Cauliflower is amazing all year round, but it's especially delicious during the winter months. Try making cauliflower mash with meatballs for the ultimate winter meal on a weekday.
This mash is full of flavor thanks to the use of bay leaves, garlic and onion. The meatballs are flavored with curry powder, which you can also add to the cauliflower mash if you like. It's can also be served with a bit of coarse mustard or piccalilli.

Peel the potatoes and cut them into large chunks. Divide the cauliflower into large pieces and place it in a large pot along with the potatoes.
Fill the pot with water and a good pinch of salt, then bring to a boil.
Lower the heat slightly once the water boils and cook the potatoes and cauliflower until tender, about 30 minutes. The exact time depends on the size of the pieces.
Meanwhile, peel the onions and garlic and chop them finely.
Mix half of the chopped onion with the ground meat. Add curry powder, 1 egg and a handful of breadcrumbs. Season with salt and pepper, then shape into 8 meatballs.
Heat 200 ml of milk along with 50 grams of butter and 2 bay leaves over low heat.
Heat a bit of butter in a medium-sized frying pan and cook the onion and garlic until soft.
Set the onion and garlic aside, then heat another knob of butter in the same pan. Brown the meatballs on all sides.
Add a small splash of water and sweet soy sauce, lower the heat, and cover the frying pan with a lid. Let the meatballs cook for about 10 minutes.
Drain the potatoes and cauliflower and use a potato masher to mash them roughly.
Remove the bay leaves from the warm milk and slowly add it to the mash to make it creamy.
Season the cauliflower mash with salt and pepper and stir in the cooked onion and garlic. Serve the mash with the meatballs, enjoy your meal!
What is the best potato for mashed potatoes?
The most suitable potato for mashed potatoes is a floury potato. Floury potatoes break apart quickly after cooking. Doré and Eigenheimer are the most common floury potato varieties.
How long can I store cauliflower mash?
You can store cauliflower mash in the refrigerator for up to 3 days. You can also freeze mashed potatoes for up to 3 months.
