Coq au vin blanc is a classic French dish with tender chicken, wine, mushrooms and herbs. Slowly cooked chicken in a light white wine sauce that's full of flavor and 'fall off the bone' tender.
A delicious and easy meal that's perfect to impress friends and family. It's great with mashed potatoes, boiled potatoes or pommes duchesse, along with warm vegetables like carrots or cauliflower. Of course, a French meal wouldn’t be complete without a baguette and a green salad with vinaigrette.

Peel and finely chop the onions and garlic cloves. Chop the parsley and set aside.
Clean the mushrooms with a mushroom brush or a piece of kitchen paper. Slice the mushrooms and set aside.
Season the chicken legs with pepper and salt and coat them with a thin layer of all-purpose flour.
Heat a knob of butter in a large pan. Cook the chicken legs on both sides until golden brown.
Remove the chicken from the pan and cook the bacon along with the onion and garlic for a few minutes until the onion becomes translucent.
Add thyme and bay leaves, along with white wine and chicken broth and bring to a boil.
Reduce the heat and place the chicken back into the pan. Put the lid on and let the chicken simmer gently for 1.5 hours.
Remove the lid and add the sliced mushrooms. Let the dish simmer for another half hour.
Remove thyme and bay leaves and season the sauce with pepper and salt.
If necessary, let the sauce cook down a little longer until it reaches the desired thickness. Garnish with fresh parsley and serve with mashed potatoes and boiled carrots. Enjoy!
