Finely CUT the onion and garlic. SPIRALIZE the courgette, if you don't have a spiralizer you can cut (thin) strips using a knife. CHOP the parsley and set aside.

HEAT olive oil in the large skillet, saute the onion and garlic for a minute. ADD the (non frozen) shrimps and the courgette noodles. DEGLAZE with white wine, this means you'll add the wine to scrape everything from the bottom of the pan to collect all the flavors. After about one minute, add the coconut milk. COOK for a few minutes until the noodles and shrimps are ready. SQUEEZE in the lemon juice and season with pepper and salt. Garnish with chopped parsley and serve with a lovely salad!
