Fill a medium saucepan with water, cook the rice in it, then drain. You can also cook the rice in a rice cooker.
Peel and finely chop the onion and garlic cloves. Remove the ends of the courgettes and cut them into cubes. Mix the cream together with 3 tablespoons of pesto.
Heat a large frying pan over high heat and toast the flaked almonds in the dry frying pan. Watch carefully, because these burn quickly. Set aside the toasted almonds in a small bowl.
Heat a dash of olive oil in the same pan and sauté the onion and garlic for a few minutes.
Add the courgette and sauté for a few minutes, then season with salt and pepper. Add the cooked rice and cook for a few more minutes over high heat.
Stir in the pesto cream and season again with salt and pepper. Serve the creamy rice with fresh basil and toasted almonds. Enjoy your dinner!
How much rice per person?
Allow about 75 to 100 grams of uncooked rice per person. Rice becomes 2.5 times as heavy during cooking.
Which vegetables go well with creamy rice?
If you want to add even more vegetables, you could include green beans or peas.
