Start with the pizza dough so that it has time to rise. You can also use store-bought dough or a store-bought pizza crust.
Meanwhile, divide the ham into pieces. Clean the mushrooms with a mushroom brush or paper towel and cut them into slices.
Season crème fraîche with salt and pepper, don't add too much salt as the ham and cheese are already salty.
Preheat the oven to 200 degrees Celsius or 390 degrees Fahrenheit.
Dust the work surface and rolling pin with flour and roll out the dough. The thinner you make the bottom, the crispier it will become during baking.
Spread the pizza crust with crème fraîche, but leave the edges free of sauce. Sprinkle with a little finely grated grana padano and grated mozzarella.
Divide the ham and mushrooms slices on top. The mushrooms will shrink, but you can add as many slices as you like.
Bake the pizza until nice and golden brown in about 10 minutes, the exact baking time depends on the oven and the thickness of the pizza crust. Add some fresh or dried oregano, if you like. Enjoy!
