Preheat the oven to 180 degrees celsius.
Mix the goat’s cheese with the honey. Remove the pits from the dates and cut one side half open. Place a little goat's cheese in the centre.
Cut the slices of bacon in half lengthwise and widthwise. Wrap each stuffed date with a piece of bacon.
Place the dates on a baking tray lined with baking parchment. Bake the dates for around 15 to 20 minutes in the preheated oven, until the bacon has crisped up.
Let the dates cool down a little before serving. Enjoy!
Why not use pitted dates?
The reason for not using pitted dates is that most of the flavour and texture is retained with the stone still in them.
Which types of sliced bacon are best for this recipe?
You can use smoked bacon slices, but unsmoked bacon slices will also work. Do not use slices of bacon which are too thick.
