Peel and finely chop the shallot. If you like, you can crush the green peppercorns a little, but this is unnecessary.
Heat the butter in a small saucepan and fry the shallot and the peppercorns. After a few minutes, add the flour and cook briefly.
Add the cognac and, shortly afterwards, the stock. Stir until smooth with a whisk. Add 2 tablespoons of the green peppercorn liquid.
Stir in the cream and season with salt. Allow to thicken into a nice, creamy sauce. Enjoy!

You can make this quick peppercorn sauce up to 2 days in advance. You can easily reheat it just before serving.
Can I omit the cream from the peppercorn sauce?
You can leave out the cream if you like. The sauce will still be delicious, just not creamy. You could add a little more liquid so that the sauce isn’t too thick.
