A Mexican bean stew with minced meat and corn takes some time, but that makes the flavors of chipotle pepper, coffee, and spices really come through.
This hearty Mexican bean stew is made with pinto beans, which are also known as tepary beans or borlotti beans, although they are not exactly the same beans. If you use dried pinto beans, you need to soak them in water overnight. You can also use canned pinto beans, in which case the stew does not need to simmer for a long time.
Chipotle peppers can be bought in dried form, usually at the Asian store; they need to be softened in hot water first. You can also buy chipotle sauce, chipotle in adobo sauce, or chipotle flakes, which are available at most supermarkets.

If you are using dried pinto beans, you need to soak them in cold water overnight.
Peel the onions and garlic and chop them finely.
Place the chipotle pepper in hot water and let it soften for about 15 minutes. For a spicy bean stew, use 2 chipotle peppers.
Then chop the pepper finely; you can remove the seeds for a milder taste if you want.

Heat a splash of olive oil in a pan and sauté the onion and garlic until the onion becomes translucent.
Brown the minced meat for about 5 minutes. Then add the tomato paste, 1.5 teaspoons of ground coriander seed, and 1 teaspoon of ground cumin for another minute.
Add the chipotle pepper along with the water. Then also add the diced tomatoes, espresso, and the beans with the water.
Add more water to make sure the beans are well covered and bring to a boil.
Once the water boils, lower the heat, place a lid on the pan, and let the beans simmer gently for about 1 to 1.5 hours.
The exact cooking time depends on the age of the dried beans. Older beans often take a little longer to cook.
Drain the cans of corn and add the corn at the end. Season the bean stew with pepper, salt, and possibly more spices.
Serve the hearty Mexican bean stew with lime wedges, sour cream, jalapeño slices, and tortilla chips. Enjoy!
What are chipotle peppers?
A chipotle pepper is a smoked jalapeño pepper; they are spicy and a bit sweet at the same time. The jalapeño peppers are fully ripened, which makes them sweeter than green jalapeños.
What are pinto beans?
Pinto beans are also called tepary beans or borlotti beans. Although borlotti are not exactly the same. They look beautiful raw, white-pink with a dark red pattern. This completely disappears during cooking, leaving you with a reddish-brown bean.
Tepary beans are a bit nutty with a sweet undertone.
