A piadina is an amazing Italian flatbread with only a few ingredients and no yeast! Homemade piadina is made in a pan and no oven needed.

  • 250 gram all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 50 ml olive oil
  • 120 ml full-fat milk at room temperature

Preparation – 10 minutes

Combine flour with salt and baking soda. You can knead the dough by hand or use a stand mixer.

Add olive oil and then gradually pour in the lukewarm milk until you've reached a dough ball. Cover the dough ball with cling film or a kitchen towel and let it rest a short while.

Finishing the homemade piadina – 20 minutes

Knead the dough again and divide into 4 equal pieces. Dust your work surface and rolling-pin with flour and roll out each piece of dough into a thin sheet. It's best to roll it quite flat and thin.

Bake the flatbread in a large dry skillet (without oil or butter!) until both sides or beautiful golden brown. Repeat for the remaining 3 flatbreads. Serve them for example with ham, mozzarella and tomatoes. Enjoy!
