An Italian quiche with pesto and mozzarella has all the flavors that remind you of Italy. A fantastic savory pie with tomatoes, mushrooms, ham, and garlic.
For a vegetarian version of this tasty Italian quiche with pesto and mozzarella, simply leave out the raw ham. The quiche will be less savory, so season it more with salt.
The best quiche is made with homemade pastry, but you can also buy a roll of savory dough or puff pastry for a quick version. This does not need to be blind baked, while homemade dough should be blind baked to shorten the baking time.

Start by making the quiche dough, or use ready-made dough.
Peel the garlic cloves and chop them finely.
Clean the mushrooms with a mushroom brush or a piece of kitchen paper and then slice the mushrooms.
Cut the sun-dried tomatoes into small pieces, slice the olives, and chop the ham into pieces.
Preheat the oven to 180 degrees Celsius and grease the quiche pan with butter.

Dust the counter and rolling pin with flour and roll out the dough.
Line the quiche pan with the dough, remove excess dough, and poke holes in the bottom with a fork.
Place a piece of baking paper on the dough and fill it with blind baking beans. You can also use dried beans or rice.
Bake the pie crust for about 10 minutes in the preheated oven.
Meanwhile, heat a good splash of oil from the sun-dried tomatoes in a medium-sized pan.
Sauté the mushrooms until golden brown for about 5 minutes. Add the garlic for one more minute.
Mix the eggs with cream and pesto, and season with pepper and salt.
Remove the blind baking beans and baking paper from the crust and sprinkle a small layer of breadcrumbs over the bottom.
Spread the sautéed mushrooms over the bottom, followed by the sun-dried tomatoes, black olives, and ham.
Pour the cream mixture over the quiche and distribute the mozzarella in pieces on top.
Place halved cherry tomatoes (cut side up) on top and finish with a little grated Parmesan cheese.
Bake the Italian quiche until cooked and golden brown for about 40 minutes. Enjoy!

For making a quiche, you use quiche dough, also known as savory pie dough. You can easily make this yourself with butter, flour, and water, but you can also buy a roll of savory dough or puff pastry.
Can I reheat a quiche?
You can easily reheat a quiche in an oven or air fryer (at 180 degrees Celsius). Cover it with aluminum foil first to prevent burning.
