Kohlrabi casserole

This delicious kohlrabi casserole includes potatoes, bacon, leeks, and more. The walnuts give the casserole a pleasing texture and an autumnal touch.

Kohlrabi may seem unfamiliar, and a possibly daunting vegetable to prepare, but don't be put off trying it. Kohlrabi is a healthy and versatile vegetable which is truly delicious in this kohlrabi casserole.

A creamy casserole which combines eggs, leeks and savoury bacon, makes this dish really flavoursome and satisfying. The walnuts not only give this dish a fuller flavour, they also lend it a pleasing crunch.

This casserole can serve up to 4 people if you serve a salad with it.

Preparation – 20 minutes

Fill a medium-sized saucepan with water and bring to a boil.

Wash the leeks and cut them into thin half moons. Peel and finely slice the garlic cloves.

Peel the kohlrabi and cut it into fairly thin slices. Cook the kohlrabi until al dente in the boiling water, then spread it over the bottom of a baking dish.

Heat a medium-sized frying pan over high heat and fry the bacon for a few minutes. Add the leeks and sauté for a further 5 minutes. Add the garlic for the final minute of cooking.

Spread the leek mixture over the kohlrabi.

Preheat the oven to 180 degrees Celsius.

Finishing the kohlrabi casserole – 50 minutes

Peel and thinly slice the potatoes. If the potato slices are on the thicker side, it is best to pre-cook them.

Layer the potato slices like roof tiles over the leeks. Mix 3 eggs with 100 ml of cream and 150 g of crème fraîche in a medium-sized bowl.

Season with salt and pepper and spread over the casserole.

Cut the half roll of goat cheese into thin slices and layer over the potato slices. Finish with a handful of grated cheese.

Bake the kohlrabi casserole until nicely golden brown and cooked through (around 40 minutes).

Serve sprinkled with a handful of chopped walnuts, and garnish with parsley if desired. Enjoy!

What is kohlrabi?

Kohlrabi is a low-calorie vegetable which is not particularly well known. This heritage vegetable comes in several colours and is incredibly nutritious.

Kohlrabi is sometimes confused with swede/rutabaga, but they are different vegetables. You can read about the difference here.

Which cream should I use in this casserole?

You can use different types of cream. It does not matter whether you use single, double/heavy or whipping cream.
