Preparation -- 10 minutes & 15 minutes waiting time

Preparation for marinated tofu is very easy, just make sure you have all of the required ingredients. If you can't find the ingredients in your regular supermarket, go to an asian or indonesian supermarket.

You can choose to press the tofu first for even more flavour, you can do this by placing something heavy on top. You can also use a tofu press, this will get rid of even more moisture and therefore more flavour, e.g. this best tofu press.

To make the tofu marinade, combine all of the listed ingredients (soy sauce, sesame oil, mirin, ginger root and sambal) in a medium-sized bowl. Whisk all of the ingredients together well, and set aside.

Drain the tofu, pat dry with paper kitchen towels. When patted dry, slice the tofu into 1/2 inch thick slabs and dry each slice again using some paper towel. Add the slabs of tofu into the medium-sized bowl containing the marinade.

Make sure each slab is well covered with marinade. Cover with some cling foil and refrigerate for about 15 minutes. For extra flavour, you can refrigerate the tofu for up to one day beforehand.

Making the tofu -- 5 minutes

Remove tofu from your refrigerator. Heat the grill pan over medium-high heat. Add canola or sesame oil to the pan. When the oil is hot, add tofu slabs to the pan in one layer. Cook on one side for two minutes, or until lightly coloured.

Turn over the tofu and cook the other side for another two minutes. Remove from the pan and serve with some additional marinade or soy sauce.

We served the marinated tofu with some sliced spring onion and sesame seeds.
