Pre-heat the oven at 180 degrees celsius or 350 degrees fahrenheit and line an oven dish with parchment paper
Rinse the cherry tomatoes, dry them, and cut them in half.
If you are using a large sheet of puff pastry, you may want to use a large round cookie cutter or something similar to easily cut out circles. If you are using individual squares of puff pastry, you’re best of letting them thaw beforehand.
Use a fork to gently pierce the puff pastry dough and spread a thin layer of crème fraîche or sour cream over it. Sprinkle a bit of grated cheese on top of them. Finally, scatter the cherry tomatoes across the tarts, making sure the cut side is facing upward.
Season with pepper and salt, and bake the tarts until they’re nice and golden – this will take approximately 20 minutes. The exact baking time will depend on your oven.
Drizzle a little balsamic vinegar over the tarts and serve them topped with some fresh basil. Enjoy!
