Start by making the dough, or use a roll of store bought quiche crust.
Peel and finely chop the onion and garlic cloves.
Clean the mushrooms with a mushroom brush or a piece of kitchen paper, then slice them.
Heat a splash of olive oil in a large frying pan and fry part of the mushrooms until golden brown.
Transfer the mushrooms to a bowl and then also fry the rest of the mushrooms. Transfer all of them to the bowl and set aside.
Heat the frying pan once more and fry the bacon for 1 minute. Add the onion and garlic and cook until the onion turns translucent.
Add all the mushrooms back to the pan and season with black pepper and salt.
Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
Mix 3 eggs with 300 grams of crème fraîche and season with 1 tablespoon of thyme, black pepper and salt.
Grease a pie dish with butter and line it with the dough. Use a fork to poke small holes in the bottom.
Divide the mushrooms over the bottom and pour the creamy mixture on top.
Finish with a layer of grated Parmesan cheese and bake the mushroom quiche until cooked and golden brown, about 40 minutes. The exact time depends on your oven.
Serve with a handful of rocket salad, enjoy your meal!
Which mushrooms are best for a quiche?
You can use different kinds of mushrooms. For example, mix white mushrooms and chestnut mushrooms.
Can I reheat a mushroom quiche?
Yes, you can reheat a quiche without any problem. Use the oven or air fryer at 180 degrees Celsius. If needed, cover the quiche with aluminium foil so it doesn’t burn or dry out.
