Preparation – 10 minutes

Chop the garlic clove and shallots as finely as possible. Wash the spring onion and cut it into fine rings. Tear the watercress into smaller pieces.

If using a fresh lemon, squeeze about 2 tablespoons of lemon juice from it.

Finishing the new potato salad – 25 minutes

Fill a large saucepan with water and bring to a boil. Place a kilogram of new potatoes in the pan and add a pinch of salt. Once the water boils, reduce the heat and simmer gently for 15 to 18 minutes, or until all the potatoes are fully cooked.

Drain the potatoes under cold, running water. Cut the potatoes in half. Mix together the mayonnaise, yoghurt, garlic, mustard, lemon juice and the finely chopped shallots. Season with salt and pepper.

Place the boiled, halved potatoes in a large bowl with the mayonnaise dressing and mix well. Add the watercress and the sliced spring onions and mix everything thoroughly. Enjoy!
