Pre-heat your oven at a temperature of 200 degrees Celsius or 392 degrees Fahrenheit. Finely dice the onion, bell pepper and chop the garlic cloves. Rinse the romaine lettuce and dry by using a salad dryer.
Put a large skillet on medium-high heat and sauté the onion and garlic until caramelized. Bake the minced beef in the same pan until golden brown. Add corn, diced tomatoes, kidney beans and mix together.
Add the herbs: paprika powder, some dried coriander and chilli. Stir together, then add pepper and salt to taste.
Grab a tortilla wrap, add the filling and wrap shut. Repeat for the other 5 tortilla wraps. Transfer to a baking dish, add cheese on top. Put in the preheated oven for about 10 to 15 minutes. Serve with romaine lettuce.
This recipe can be complemented with a bottle of tequila flavoured beer!
