Serving tip: These oven-baked tortillas go really well with a Mexican tequila beer.
Preheat the oven to a temperature of 200 degrees Celsius. Chop the onion, red pepper and garlic cloves as finely as possible. Wash the romaine lettuce and dry it using a salad spinner.
Heat olive oil in a large frying pan over medium heat and sauté the onion and garlic. Add the (mixed) mince and fry until browned. Add the sweetcorn, diced tomatoes, tomato purée and kidney beans.
Mix everything well together. Season to taste with the spices: smoked paprika, dried coriander and chilli flakes. Taste and season with salt and pepper.
Fill a tortilla with the sauce and fold it closed. Repeat for the remaining 5 tortillas. Place the tortillas in an oven dish and sprinkle a layer of cheese on top.
Bake the tortillas for 10-15 minutes in the preheated oven. Serve with the lettuce. Enjoy your meal!
