You can use different ways to color paella yellow, usually saffron is used for this. The threads should be placed in warm water to release the color. You can also use turmeric or yellow food coloring, the exact amount depends on the type you use.

Preparation - 15 minutes

Cut the chicken thighs into large pieces, but do not remove the bone as this will add flavor to the paella.

Cut the lemon into wedges and set aside. Peel the garlic cloves and chop them finely.

Remove the seeds from the peppers and cut them into small pieces. Remove the stems from the tomatoes and chop them into small pieces as well.

If using saffron, place the threads in a little warm water to release the color.

Make sure all the ingredients are ready so you can grab them directly while cooking.

Making Paella Mixta - 45 minutes

Heat about 100 ml of olive oil in the paella pan and fry the pieces of chicken until they are nicely golden brown.

Push the chicken to the side and fry the peppers for a few minutes in the middle. Add the garlic and smoked paprika, and after 1 minute, also add the chopped tomatoes along with the rosemary sprig.

Turn the chicken to avoid burning and cook the tomatoes until most of the moisture has evaporated.

Add the rice and stir briefly. Pour in the chicken broth and ensure that the rice is fully submerged in water. Let the paella boil on high heat for 10 minutes.

Add the saffron, turmeric or yellow food coloring together with half a teaspoon of black pepper. Lower the heat and let the rice cook for about 15 minutes. After about 5 minutes, add the shrimp.

Make sure all the broth has evaporated and the rice is cooked. If the rice is not cooked yet, you can add a little extra water.

Also make sure the bottom is crispy, this is called a 'socarrat'. Ensure that the rice sticks to the pan but does not burn. Serve immediately with lemon wedges, enjoy your meal!

Paella uses a round short-grain rice. This absorbs a lot of moisture and flavor while maintaining a certain firmness. Because of these characteristics, good paella rice will not stick together and will not fall apart.
