Pan con tomate

Pan con tomate is also called pan a la Catalana. This Spanish tapa of crispy bread, tomatoes and garlic comes from Catalonia. In Catalan it is called pa amb tomàquet.

This is an incredibly easy snack to prepare, made from slices of bread, garlic and puréed tomatoes. For best results, use the most flavoursome tomatoes, preferably those which have been sun-ripened. You can grill the bread on a griddle pan, or in the oven.

Serrano ham is often added to these open Spanish tomato sandwiches. In addition to being an ideal tapas dish, pan con tomate is also regularly served as a delicious Spanish breakfast.

Making pan con tomate – 10 minutes

Remove the crowns from 2 tomatoes and use a grater to finely shred the flesh. It is easiest to cut the tomatoes into quarters and then grate them down to the skin. This way you are left with the peel, which we are not going to use.

If your tomatoes are very juicy, you can drain them in a sieve to remove most of the liquid, but make sure that the tomato mixture does not become too dry.

Peel the garlic clove and cut the bread into 8 slices. Heat a griddle pan over a high heat and drizzle the slices of bread with a little olive oil.

Grill the pieces of bread on both sides until they are nicely golden brown. Immediately rub them with garlic. Season the tomatoes with salt. Spread a thin layer of tomato over the toasts and serve immediately. Enjoy!
