Pasta alla sorrentina is the ultimate comfort food, made with a fragrant and savoury tomato sauce, fresh basil and melted mozzarella. This pasta comes from the Campania region, where Sorrento is located.

For a quicker version, you can skip baking and serve the pasta straight from the pan, but the melted mozzarella is what gives this dish its creamy taste.

Making pasta alla sorrentina – 50 minutes

Fill a pan with water and a good pinch of salt, then bring it to a boil.

Crush and peel the garlic clove, but leave it whole. Heat a splash of olive oil with the garlic in a deep frying pan on low heat, allowing the oil to absorb the garlic flavour.

Add the passata and 2 sprigs of basil. Let it simmer gently for 10 to 15 minutes.

Meanwhile, cook the pasta al dente in the boiling water. Tear or cut the mozzarella into small pieces.

Preheat the oven to 200 degrees Celsius (390 degrees Fahrenheit).

Remove the garlic and basil from the tomato sauce and season with salt.

Once the pasta is al dente, stir it into the tomato sauce. Taste and season again if needed.

Spread half of the pasta into an oven dish. Add half of the mozzarella and grated Parmesan on top. Then add the rest of the pasta.

Finish with the rest of the mozzarella and Parmesan cheese. Bake the dish in the preheated oven for about 20 minutes, until the cheese is golden brown.

Serve with fresh basil and a crisp green salad. Enjoy your meal!

Which pasta is best for pasta alla sorrentina?

Larger pasta shapes like conchiglie, fusilli or penne rigate (gigante) are often used. This dish is also made with gnocchi – then it’s called gnocchi alla sorrentina.

Can I reheat pasta alla sorrentina?

Yes, you can easily reheat it in the oven. Cover the dish with tin foil to prevent burning. You can also reheat it quickly in a frying pan.
