Penne alla vodka, a delicious simple weekday meal. This pasta is ready within 20 minutes, an amazing pasta with cheese and fresh basil.

  • 400 grams penne pasta
  • 1 shallot
  • 2 garlic cloves
  • 1 can of tomato paste (140 grams)
  • 1 teaspoon chili flakes
  • 6 tablespoons of vodka
  • 100 ml heavy cream
  • 50 grams grated parmesan cheese or grana padano + extra
  • handful of fresh basil
  • olive oil
  • salt to taste

Preparation – 10 minutes

Fill a medium-sized pan with water and cook the pasta al dente.

Peel and finely chop the shallot and garlic cloves.

Finishing penne alla vodka – 10 minutes

Heat a dash of olive oil in a deep skillet and sauté the shallot and garlic for a few minutes. Then fry the tomato paste together with the chili flakes for a few minutes to deacidify the tomato paste.

Lower the heat and stir in the vodka. Let it simmer for a few minutes and then stir in the heavy cream and about 50 grams of finely grated cheese.

Once the penne is al dente, add it along with a bit of the cooking water. Stir to a nice consistency and season with salt.

Serve the penne alla vodka with more grated cheese, fresh basil and a fresh salad, enjoy!
