You can use either salted or unsalted pistachios to make these goat cheese balls. Salted pistachios go well with the soft goat cheese and honey, but be careful, as they can quickly become too salty.

Take the goat cheese out of the fridge about 20 minutes beforehand so it is soft enough to mix.
If needed, shell the pistachios first and then chop them roughly. Place the chopped pistachios on a medium plate.
Strip the rosemary leaves from the stems and chop them finely. Mix the rosemary with 1 tablespoon of honey into the goat cheese and stir until smooth.

Use your hands to roll the goat cheese into balls and make sure the balls are not too big.
Roll the balls directly in the chopped pistachios and place them on a plate.
Repeat with the remaining goat cheese; you can make about 18 balls from this recipe.
When you place the goat cheese balls in the fridge, let them come to room temperature for about a quarter of an hour before serving.

Can I replace the rosemary?
You can leave out the fresh rosemary, or replace it with fresh thyme.

You can store goat cheese balls in the fridge for up to 3 days, but keep in mind that the pistachios will become soft.
