A basic recipe for rice pudding is always useful to have: you can prepare this simple breakfast in just 20 minutes. Classic, of course, with cinnamon, but you can also vary with vanilla, saffron, citrus, cocoa, coffee, and so on.

Additionally, you can add fruit, such as apple, mango, banana, raisins, or even try adding nuts.

The pinch of salt in the rice pudding is meant to enhance the flavor, but you can leave it out if you want.

Making rice pudding - 20 minutes

Place 175 grams of pudding rice together with 1 liter of milk in a medium pot, preferably one with a thicker bottom.

Lower the heat slightly once the milk boils and let the rice cook for about 15 minutes. Stir regularly to prevent it from sticking and to ensure the starch releases well.

Turn off the heat once the rice is cooked and do not let it thicken. Rice pudding is quite liquid, and if it cools down too much, it will become too thick.

Stir in a pinch of salt and a tablespoon of sugar into the rice pudding; you can add more sugar to taste, but generally, rice pudding is not very sweet.

Preferably serve it (warm) with cinnamon powder, enjoy!

Which rice for rice pudding?

The best rice to use for making rice pudding is pudding rice; this round grain absorbs milk well. You can also use risotto rice, which is also a round grain that takes in milk well and becomes creamy due to the starch content. Even sushi rice can be used, as it also absorbs milk effectively.

If you really don't have round grain rice, you can use other types of rice with longer grains. However, the rice pudding will not be as creamy, and it takes longer to cook, so it's not really recommended, but it is possible.

What is the difference between rice porridge and rice pudding?

Porridge is made from rice and milk that is runnier than rice pudding. Rice pudding is often thickened even further with egg yolks, making it firmer and richer in flavor.

Another difference: rice pudding is sweeter than rice porridge.
