Making Mascarpone Cream - 10 minutes

Make sure the cream is very cold, as cold cream whips best.

Whip the cream until it is firm, but not too firm.

Add the mascarpone with 2 tablespoons of icing sugar and optionally 1 teaspoon of vanilla extract. You can adjust the sugar to your taste.

Mix until smooth, making sure to stir as little as possible since over-mixing can make the mascarpone watery.

You can now use the mascarpone cream to serve with cakes and pastries. It is firm enough to use in a piping bag with a nozzle for beautiful swirls. Enjoy!
