Our pumpkin and merguez sausage traybake is also packed full of vegetables, and feta cheese, making it a complete meal. An easy recipe, with masses of flavour, and delicious crunch of crispy pumpkin seeds.
A traybake is a baking tray filled with a complete meal; a kind of one-pot dish, but made in the oven. This one is full of the tastes and flavours of autumn, including pumpkin and cinnamon.
Pumpkin is a filling vegetable, with a beautiful colour, which is inextricably linked to autumn. We also use a large (or 2 medium) courgettes/zucchini, merguez sausages, and feta cheese, for a quick and easy main course.
Pumpkin seeds lift the texture of this dish. Pumpkin and courgette really benefit from something crunchy to contrast their soft flesh.

Peel the pumpkin, remove the seeds, and cut the flesh into chunks. Make sure the pumpkin pieces are not too large or too thick, or they will not cook in the same time as the other ingredients.
Top and tail the courgettes/zucchini and cut them into half moons. Peel the red onion and cut it into wedges. Peel the garlic cloves and leave them whole.
Preheat the oven to a temperature of 180 degrees Celsius (350 degrees Fahrenheit).
Mix the pumpkin and courgette pieces with 1 teaspoon of cayenne pepper, half a teaspoon of ground cumin and 1 teaspoon of cinnamon. Season with salt and black pepper and drizzle with olive oil.
Spread the pumpkin and zucchini over a baking tray and place the pieces of red onion and whole garlic cloves in between them.
Distribute the merguez sausages between the vegetables and drizzle everything, again, with olive oil. Bake the traybake in the oven for around 25 to 30 minutes; the exact time will depend on your oven and the thickness of the vegetables.
Crumble the feta over the traybake and garnish with a handful of pumpkin seeds. Enjoy!
Which types of pumpkin are best for a traybake?
You can use different types of pumpkin, such as bottle gourd, Hokkaido pumpkin\Kuri squash or nutmeg gourd.
Can I use sausages other than merguez in this dish?
You can replace the merguez sausages with chipolata sausages, which have a milder taste, making the traybake less spicy.
