Raclette quiche

Making the Raclette Quiche – 45 minutes

Mix 5 eggs with 300 ml of cream and season with salt and pepper.

Coat a pie dish with butter and preheat the oven to 180 degrees Celsius.

Fold the filo dough sheets a few times and lay them in a circle in the pie dish. Repeat for all the sheets of filo dough.

Wedge the raclette cheese slices and bacon between the filo dough.

Pour the cream mixture over the dough and finish with a bit of grated cheese.

Bake the raclette quiche until golden brown, about 30 minutes. Serve with a fresh salad and enjoy!

Raclette cheese is a semi-hard cheese made from raw or pasteurized milk. It's a cheese with a high fat content, which makes it melt perfectly.

You can buy raclette cheese in slices or as a (half) wheel. Traditionally, a half wheel is heated, and then a layer of melted cheese is scraped off.

You can find raclette cheese in many flavors, such as black pepper, white wine, or even smoked.
