Wash the cucumber, cut it in half if necessary and coarsely grate it into a small bowl.
Peel the small onion and dice as finely as possible; add this to the bowl.
Season with a generous amount of salt (1 tablespoon or more) and about half a tablespoon of ground white pepper. Add more salt or pepper to taste.
Pour over enough white vinegar to half cover the grated cucumber. Add a dash of sunflower oil and mix well.
You can serve this simple cucumber salad immediately, or keep it covered in the fridge for up to 2 days. Enjoy your meal!
Can I make this cucumber salad less sour?
Instead of standard vinegar, you could use rice vinegar or brown malt vinegar.
The acidity in rice vinegar is far milder, and the taste is slightly sweet. Add some granulated sugar to taste, and stir well into the salad.
I do not have a grater, can I still make this salad?
Instead of grating the cucumber, you could opt to cut it into thin slices.
The easiest way to do this is with a mandoline, but a chopping board and chef’s knife will do just as well!
