An easy dish which delivers that delicious, stir fried, wok flavour. These tasty steak strips, with noodles and vegetables, make an ideal weekday meal.
A steel wok imparts a unique flavour to stir fried dishes. If you prepare these steak strips with noodles and vegetables in another type of wok, the taste will be less authentic. The flavour may be slightly less intense, so it's best to add a little extra soy sauce.
This stir fry dish doesn't need much in terms of seasoning, as the wok itself will impart most of the flavour to the noodles. If you prefer more sauce, you can add a little water and cornflour to the soy sauce before adding it to the noodles.
Shimeji mushrooms (white) or namko mushrooms (brown) are firm, closely packed mushrooms with an autumnal flavour. They can usually be bought at larger supermarkets and Asian grocers, but you can use other mushrooms such as oyster mushrooms, chestnut mushrooms or shiitake.

Peel and slice the carrots. Remove the ends of the courgette and cut it into cubes.
Wash the pak choi and chop coarsely. Slice the bottom off the mushrooms to separate them, or slice your mushrooms if using non-clustered varieties.
Cut the baby sweetcorn into chunks. Peel the red onion and garlic cloves. Slice the red onion into thin half moons, and finely slice the garlic.
Prepare the egg noodles according to the packet instructions. Some varieties can be added directly to the wok, whereas others need soaking or cooking first.
Heat a wok over a high heat and add a splash of neutral oil as soon as the wok starts to smoke.
Briefly stir fry the steak strips until seared all over, then immediately remove them from the wok.
Heat another splash of neutral oil in the wok and stir fry the carrot in it for a few minutes.
Add the mushrooms and stir fry for 2 minutes. Once the mushrooms are nicely browned, add the courgette and sweetcorn and fry for 5 more minutes, stirring constantly.
Add the pak choi and red onion and stir fry for another 5 minutes.
Once all vegetables are al dente, add the noodles, along with the steak strips, chopped garlic, about 4 tablespoons of soy sauce and toasted sesame oil to taste.
Stir well and serve immediately. Enjoy!
Which noodles are best for stir fries?
In theory, you can use all types of noodles for a stir fry. Most noodles are cooked in boiling water first, then drained and added to the wok.
There are also wok-ready noodles, which are already pre-cooked and can be added directly to the wok.
What are steak strips?
Steak strips can be bought at supermarkets, and are steak which has already been cut into conveniently-sized strips. Of course, you can slice steak, or any other tender piece of beef, yourself.
