Peel the sweet potatoes and cut them into pieces. Cook them in a large pan filled with water and salt for about 15 minutes, depending on the size of the sweet potato pieces. Drain them completely, they should be as dry as possible.
Add the flour and some more salt. Mix it well, it wouldn't become a firm dough, it will sort of look like a thick batter. Heat the oven to 200 degrees celsius or 390 degrees fahrenheit.
Lay a baking tray with parchment paper and divide the batter. Not too thick, but also not too thin, especially on the edges. Bake the pizza crust for about half an hour.
Cut the parsnip into thin slices, if they aren't really thin we advise you to boil them for a few minutes before adding them to the pizza. Cut the feta cheese and shallot in slices, halve the cherry tomatoes and chop the walnuts.
Finely cut the garlic clove and mix it with the tomato paste. Season with pepper and salt and divide over the pizza crust. Divide the parsnip slices, shallot, feta cheese, cherry tomatoes and chopped walnuts.
Place the pizza back into the oven for about 10 minutes, or until the cheese has softened. Finish the pizza off with some rocket and honey if you like. Enjoy!
