A deliciously fluffy truffle omelette makes a luxurious and satisfying lunch which you can easily make at home. You can use both fresh truffle or truffle tapenade.
There are many types of truffle, some more expensive than others, but there are also affordable truffles. There are autumn, summer and spring truffles, but also white truffles. These are readily available in certain parts of France and Italy, but in the United Kingdom you will usually have to go to a specialist or wholesaler to find them.
Truffle tapenade, on the other hand, is available in many places and often at high street supermarkets. The cheaper versions contain a large percentage of mushroom, but that doesn't matter because they are still incredibly tasty.

Beat the eggs with a whisk and add 2 tablespoons of whole milk. If you're using truffle tapenade, add it now. Season the mixture with salt and pepper.
Heat a knob of butter in a large frying pan over a medium heat. Add the eggs and place a lid on the pan.
Make sure the heat is not too high, otherwise the underside of the omelette will burn before the rest of it is cooked.
Once the omelette has puffed up, sprinkle a little grated Parmesan cheese over the top. If using fresh truffle, grate a little of the truffle over the omelette.
Fold the fluffy omelette in half and transfer it to a plate. Serve with a little extra grated Parmesan cheese and more shaved truffle. Enjoy your meal!
