Preparing the marinade – 10 minutes

Wash the cauliflower, remove the green leaves and cut off the stalk. Try to keep the cauliflower in 1 piece. Grate the lime zest and squeeze the juice into a small bowl.

Mix together the yoghurt, chilli powder, ground cumin, curry powder and garlic powder. Season with salt and pepper. Mix well to combine.

Place the prepared cauliflower in the bowl of marinade. Cover the entire cauliflower with the marinade. If your mixing bowl is too small, place the cauliflower on a deep plate and pour over the marinade.

Pour any remaining marinade into the cauliflower.

Roasting the cauliflower – 45 minutes

Preheat the oven to 200 degrees Celsius. Add a splash of sunflower oil to an ovenproof dish and place the marinated cauliflower in the centre of the dish.

Put the baking dish in the preheated oven. Bake the cauliflower for 30 to 40 minutes until golden brown. The marinade will form a delicious crust around the cauliflower.

Remove the cauliflower from the oven after 30 to 40 minutes and allow to cool a little before serving. Cut the cauliflower into wedges. It goes really well with a piece of fish or meat. Enjoy your meal!
