These delicious zucchini roll-ups in tomato sauce have a tasty filling of bean puree. The soft and slightly sweet beans pair perfectly with zucchini and tomato sauce.
The bean puree as filling for the zucchini roll-ups gives this vegetarian dish an extra touch, making this casserole full of flavor. It’s a bit different from the usual casseroles, making it a great surprise for your guests during a dinner party.
If you prefer a completely low-carb version of these zucchini roll-ups in tomato sauce, you can replace the bean puree with ricotta. Beans are high in carbohydrates, but due to the fiber they contain, the carbohydrates will enter your blood slowly.

Wash the zucchinis, remove the ends, and use a mandoline or slicer to make thick slices. Use the soft inside for the tomato sauce.
Cover the zucchini slices with plastic wrap so they do not dry out.
Cut the leftover pieces of zucchini into small pieces; it doesn’t have to be perfect as we will puree the sauce.
Peel the onion and garlic cloves, chop them roughly, and set aside 1 garlic clove.
Heat a splash of olive oil in a medium-sized pan. Sauté the onion and 3 garlic cloves until the onion is translucent.
Cook the zucchini pieces for about another 5 minutes, then add passata, a few sprigs of fresh sage, and water.
Once the sauce starts to boil, turn the heat low and cover the pan. Let the sauce simmer for about 20 minutes until the zucchini and onion are completely soft. Meanwhile, make the bean puree.

Drain the beans and keep the liquid. Puree the beans with 1 roughly chopped garlic clove.
Add the zest and juice of half a lemon and season the bean puree with pepper and salt.
Toast the pine nuts in a dry frying pan.
Remove the sage from the tomato sauce and puree the sauce until fairly smooth. Season the tomato sauce with pepper and salt; if the sauce is too thin, you can let it reduce without the lid.
Spread the tomato sauce over the bottom of a (round) baking dish.
Preheat the oven to 200 degrees Celsius.
Spread a thin layer of bean puree on each zucchini slice and roll them loosely.

Stand them upright in the tomato sauce and repeat until the baking dish is filled with all the zucchini roll-ups.

Sprinkle a generous handful of grated Parmesan cheese over the zucchini roll-ups and bake until cooked and nicely golden brown in about 20 minutes.

The exact baking time depends on the oven and the thickness of the zucchini slices.
Serve with toasted pine nuts, enjoy!
Can I replace the cannellini beans?
You can replace the cannellini beans with another type of white bean, or use ricotta if you do not want to use beans.
How long can I store zucchini roll-ups?
You can store the zucchini roll-ups in tomato sauce for up to 3 days in the refrigerator. You can then reheat them in the microwave, or cover them with aluminum foil to warm them up in the air fryer or oven.
