Preheat the oven to 200 degrees celsius.
Peel and finely chop the onion. Grate the cheddar and set aside.
Make the cheese sauce by melting the butter in a small saucepan. Stir in the flour and cook for a few minutes. Gradually add the milk to the roux and keep beating with a whisk to prevent lumps.
Add 2 teaspoons of smooth mustard and then gradually add the grated cheddar. Stir after each addition, until the cheese has melted and the sauce has become nice and thick.
Spread the tortilla chips over a large oven dish and pour the cheese sauce over them. Sprinkle over the finely chopped red onion, along with the slices of jalapeño.
Bake the nachos for around 10 minutes, until the cheese is nicely melted. Serve immediately and enjoy!

You can use all sorts of cheese, such as cheddar, other mature hard cheeses, or grana padano. For a mild cheese sauce, you can use a young cheese.
