Start by slicing and dicing all the veggies. Red onion in large wedges and garlic cloves in thin slices. Sweet potato and carrots need to be peeled first.
Then cut into large pieces, the same goes for the zucchini and the bell peppers. Don't forget to remove the seeds from the bell peppers first. Preheat the oven to 200 degrees Celsius or 400 degrees Fahrenheit.
Now you toss all the sliced veggies together in the oven dish and give it a nice drizzle with some olive oil. Add the dried oregano and chilli sea salt. Season with pepper and salt.
Place the oven dish in a pre-heated oven for about 20 minutes, or until fully cooked. Enjoy!
