  • 475 grams of tortilla chips
  • 500 grams of minced beef
  • 25 grams of taco seasoning
  • 1 can of refried beans (440 grams)
  • olive oil
  • 2 tomatoes
  • 2 romano peppers
  • 125 grams grated cheese
  • 1 avocado
  • 2 spring onions
  • 200 grams of sour cream or crème fraîche
  • handful of sliced jalapeños

Making the beef nacho bake – 30 minutes

Wash the peppers and tomatoes, remove the seeds from both, and cut the flesh into small cubes.

Preheat the oven to 190 degrees Celsius.

Heat a splash of olive oil in a large frying pan and fry the beef mince until browned.

Add the taco seasoning, along with refried beans, and fry for a further 3 minutes.

Spread out the tortilla chips on a large baking dish and distribute the minced beef mixture over the top.

Scatter the pepper and tomato over the nachos, along with some jalapeño slices and 125g grated cheese.

Bake the nachos until nicely golden brown; this will take around 15 minutes. The exact baking time depends on your oven.

Meanwhile, slice the spring onion into thin rings and chop the avocado into cubes.

Serve the nacho bake garnished with spring onion, avocado and sour cream. Enjoy!
