Peel the onion and garlic cloves and finely grate them. Finely chop the parsley and mix the onion, garlic and parsley together with oregano, mint, paprika, mince and a handful of breadcrumbs.
Mix well, and season with salt and pepper. If the mince doesn’t quite hold together, you can add a few more breadcrumbs. Do not add too many, because then the bifteki will become dry.
Cut the feta into long strips. Divide the mince mixture into 4 equal parts, pressing each flat with your hand. Place a piece of feta on top of each patty, and wrap the patty around the feta.
Make a kind of meat parcel and ensure that the feta is fully enclosed, so that it cannot run out during grilling.
Heat a griddle pan over a high heat and drizzle the bifteki with olive oil. Griddle the bifteki on all sides until golden brown, they are done after around 10 to 15 minutes.
Serve the bifteki with feta accompanied with fries and a salad of lamb's lettuce, tomatoes and a little extra feta, or serve it with a standard Greek salad. Enjoy your dinner!

Bifteki (or Biftekia) is Greek spiced minced meat, “bifteki” is best translated as “burger”. Bifteki are also referred to as Greek meatballs or Greek burgers.
It is a variation of keftedes, which are Greek meatballs. Bifteki is much larger in size than keftedes.
Can you omit the feta?
Yes, you can omit the feta, because this spicy minced meat is extremely tasty, even without the filling.
