WASH the celery stalks and cut away the ugly parts. CHOP each celery stalk and set aside. DICE the onion, if you're not sure how to dice onions, check out our tutorial on dicing onions like a pro.
Peel and dice the sweet potato very fine. If you're using dried chicken stock cubes (like we did), prepare 1 litre of chicken stock. Simply heat up 1 litre of water, crumble the dried chicken stock and pour over boiling water. Stir and set aside for now.
Heat up the large pan on medium-high heat and add in 75 grams of butter. When the butter has melted, turn down the heat and add in celery. Sweet potatoes and onion. Cover the pan with its lid. Let stew for about 10 minutes, or until slightly soft.
Make sure that the vegetables don't brown. Add 1 litre of chicken stock. Bring to a boil, then reduce to a light simmer for at least 15 minutes. Simmer until the veggies are very tender.
Blend using a blender or use an immersion blender. Add salt and pepper to taste. Ladle the celery soup into soup bowls, and spoon over some double cream, swirl and enjoy!
