For a quick version, don't add the soy sauce and other seasonings to the chicken to marinate, simply add everything directly to the pan for a quick soy-based sauce. Do this after frying the chicken, red onion, garlic and ginger.
The rice and green beans you serve alongside don't need any extra seasoning, as the soy sauce is already incredibly flavourful. You can also serve some pickled cucumbers and prawn crackers, if you like.

Peel and finely chop the garlic cloves. Peel and finely grate the fresh ginger.
Remove any excess fat and sinew from the chicken breasts, then dice the chicken. Mix the chicken with the grated ginger, finely chopped garlic, the juice of half a lime, 10 tablespoons of sweet soy sauce (ketcap manis), 3 tablespoons of regular soy sauce, and 1 teaspoon of chilli sauce (sambal).
Let the chicken marinate for at least an hour; a longer marination will give the chicken more flavour and make it more tender.
Peel and finely chop the red onion. Cut the spring onions into thin rings and set aside.
Heat a splash of sunflower oil in a deep frying pan and fry a generous handful of cashews until nicely golden brown. Remove the nuts from the pan and reheat the oil.
Sauté the red onion for 2 minutes, then add the chicken and the marinade and fry for another 5 minutes.
Turn down the heat slightly and add 250 ml of chicken stock. Bring to a gentle simmer. Meanwhile, cook the rice and green beans.
Make a paste of 2 tablespoons of cornflour and a little water and add it to thicken the sauce. Simmer for a few more minutes, then season with more chilli sauce, soy sauce, etc., if necessary.
Serve the chicken in soy sauce with rice, green beans, cashew nuts and spring onion. Enjoy your meal!
