Peel and finely chop the onion and garlic cloves. Pat the chicken legs dry with kitchen paper and sprinkle with salt and pepper.
Mix the miso paste with a dash of mirin and soy sauce and set aside.
Preheat the oven to 180 degrees celsius or 355 fahrenheit.
Heat a large frying pan over high heat and add a splash of sunflower oil and a knob of butter. Fry the chicken legs until nicely browned on both sides.
Transfer the chicken legs to a large baking dish and sauté the red onion and garlic cloves in the pan. After a few minutes, deglaze with white wine and stir in the miso mixture.
Let the sauce thicken for a few minutes, then spread it over the chicken legs. Bake the chicken legs until cooked through, around half an hour.
The exact baking time depends on the oven and the thickness of the chicken legs. Garnish with fresh parsley, if desired. Enjoy!
What types of miso paste are there?
There are white, yellow, red and black miso pastes. Basically, the darker the miso, the stronger the taste.
What is miso paste made of?
Miso paste is made from fermented soya beans, salt and koji (a type of fungus). Depending on the type of miso you use, rice, wheat or barley may also have been added.
