These Dutch koffiebroodjes (coffee rolls) made from puff pastry are a quick and easy version of the delicious rolls filled with creamy custard and raisins.
Dutch coffee rolls are usually made with puff pastry that has yeast added to it, which makes the rolls rise. Since regular puff pastry doesn’t have yeast, these easy puff pastry coffee rolls won’t be as big.
Making custard isn’t hard, but for an even easier version of these rolls, you can also use store-bought custard. You can also replace some of the raisins with golden raisins if you prefer.

Heat the milk with vanilla over low heat. Do not let it come to a boil.
Whisk the egg yolk with the sugar and flour until smooth.
Add a bit of the warm milk and stir immediately to avoid lumps. Then, add the rest of the milk and stir again until smooth.
Pour the mixture back into the pan and cook the custard on low heat until it thickens.
Keep stirring to prevent burning or lumps. You can check if it’s ready by drawing a line on the back of a spoon—if the line stays visible, the custard is done.
Place a piece of parchment paper on top of the custard to prevent a skin from forming. Let it cool down.
Place the raisins in a bowl and pour boiling water over them. Let them sit for about 15 minutes.
Preheat the oven to 180 degrees Celsius and line a baking sheet with parchment paper.
Place the puff pastry on the countertop and spread the custard evenly over it.
Drain the raisins well and spread them over the custard.
Roll the puff pastry tightly and cut the roll into thick slices.
Place the rolls on the lined baking tray and bake them until golden brown, about 15 to 20 minutes. The exact baking time will depend on the oven and the size of the rolls.
Heat a few tablespoons of apricot jam and brush the top of the rolls right after baking.
Let the rolls cool down a bit, but they taste best when they are still a little warm.
Make a simple glaze by mixing 3 tablespoons of powdered sugar with half a tablespoon of water until smooth. Drizzle the glaze over the rolls, and enjoy!
What are Coffee Buns?
Coffee buns are made from rolled dough filled with custard and raisins. They are finished with apricot jam and a sweet glaze.
The French pains au raisins are similar, but they are not the same as our Dutch coffee buns. In the Netherlands, puff pastry with yeast added (yeasted puff pastry) is used, while the French version usually uses a dough that’s more like brioche. There are also a few other small differences between the Dutch and French versions.
