A galette des rois (French epiphany cake) or kings cake for celebrating the day the 3 kings visited the infant Jesus. Here's how to bake this popular cake from France!

Pre-heat the oven to a temperature of 180 degrees Celsius or 356 Fahrenheit. Grease a cake tin with butter.
Mix 140 grams of almond flour together with 100 grams of sugar, 2 eggs and 75 grams of butter (at room temperature).
Place a sheet of puff pastry onto the bottom of the cake tin and poke holes in it using a fork. Divide the almond mixture over the puff pastry and place the second sheet of pastry on top of it.
Optional: choose to include a dried bean (fève) or a small porcelain figurine into the filling. The one who has the dried bean is the king! Make sure to warn others about the dried bean before eating the cake!
Press the sides well and create a pattern using a sharp knife. Beat 1 egg yolk and brush it over the top of the cake using a silicone brush.
Bake the cake in about 20 minutes golden brown. The exact time needed to bake this cake is dependant on how powerful the oven is. Remove from the oven and let cool down.
You can eat the galette des Rois lukewarm or when completely cooled down. Enjoy!
