Making the goat cheese, sun-dried tomato and olive open sandwich – 10 minutes

Heat a small frying pan over a medium-high heat. There is no need to add butter or olive oil to the pan. Toast the pine nuts for a few minutes, or until golden brown, then immediately sprinkle with some fine salt.

You can store the toasted pine nuts in an airtight container, as having toasted pine nuts ready to use is always handy! Spread the goat cheese over the slices of bread with a knife or spoon.

Chop the sun-dried tomatoes into small pieces. Cut the olives into small rings. Sprinkle the sun-dried tomatoes and olive rings over the bread.

Use a little of the oil from the jar of sun-dried tomatoes to season the rocket.

Finish the sandwich by sprinkling some rocket and toasted pine nuts on top. Enjoy!

No we didn't, we really used rucola :)

Today, months later, we came across an article about the different names this green salad has. We call it rucola, you call it arugula, and again someone else calls it rocket. But fun fact is that it's exactly the same and we didn't realized that until now haha :)
