Goma-dare sauce is made with few ingredients and is a delicious mix of nutty, salty, savory, and umami flavors. It's a fantastic sauce that you can use in many ways: as a dip, with noodles, various vegetables, and even as a salad dressing.
If your sesame paste is very hard, it’s harder to mix with the other ingredients. The sesame paste mixes more smoothly if you warm the dashi (or water) first.

Mix the sesame paste with sugar and stir well with a small whisk until the sugar dissolves.
Gradually add dashi, rice vinegar, and soy sauce while continuing to mix until you have a smooth sauce.
If you add the liquid too quickly, the sesame paste may clump together, which is not what you want.

If the sauce is too thick, you can add a little extra dashi or water.
Use the sesame sauce as a dip with spring rolls or cabbage rolls, serve with noodles, or thin it out to use as a dressing.
You can now keep this sesame sauce in the fridge for up to a week. Enjoy!
Is goma-dare sauce vegetarian?
No, but you can easily make goma-dare sauce vegetarian (and even vegan) by replacing the dashi with water. Dashi is made from dried bonito flakes, similar to tuna.
Which sesame paste for goma-dare?
For traditional goma-dare, Japanese sesame paste, or nerigoma, is used. But you can also replace this with tahini. The main difference between nerigoma and tahini is in the preparation method. Nerigoma is made from roasted sesame seeds, while tahini is made from unroasted (or very lightly roasted) sesame seeds.
There are tahini versions made with roasted sesame seeds; this version will therefore taste closer to nerigoma.
