Serve these kabobs with pita bread, tzatziki, charred lemon, and a Greek salad. The marinade is quick and easy to make and gives a lot of flavour with just a few ingredients.
If you grill the chicken on a charcoal barbecue, they will have even more flavour, but they also turn out juicy and tasty in a grill pan.

How to make Greek chicken kabobs – 20 minutes + time to marinate
Peel the onion and grate it, this will release juice that gives the marinade extra flavour.
Peel the garlic cloves and chop them finely or use a garlic press.
Grate the lemon peel and then cut the lemon in half.
Chop the mint leaves as fine as possible and mix them with the grated onion, garlic, lemon zest and 2 tablespoons of olive oil. Season with salt and pepper.
Trim any extra fat or sinew from the chicken and cut it into cubes. Mix the chicken with the marinade and let it rest for about 4 hours.

If you want to serve a Greek salad on the side, you can make it while the chicken marinates. Cut tomatoes, cucumber and red bell pepper into quite large pieces.
Add slices of red onion and a handful of pitted black olives. Season with a bit of olive oil, salt, pepper and dried oregano.
Thread the marinated chicken onto skewers and heat a grill pan on high heat. You can also grill the chicken on a barbecue.
Grill the halved lemons to bring out their flavour. Grill the chicken skewers for a few minutes on each side until the chicken is cooked through.
You can warm the pita bread while the chicken grills. Serve the Greek chicken kabobs with the grilled lemon, pita bread, salad and tzatziki. Enjoy your meal!
What kind of chicken should I use?
You can use either chicken breast or boneless chicken thighs. Thighs are a bit fattier, which makes them even more flavourful.
Can I use dried mint?
It’s best to use fresh mint for the marinade because it has a stronger and fuller taste. But if you don’t have fresh mint, you can substiture for dried mint.
