Melt the butter and let it cool off to room temperature. You can knead the dough by hand or use a stand mixer.
Mix flour together with baking powder and sugar. Add the egg and knead until incorporated.
Gradually add 60 ml of lukewarm water and keep on kneading. Add vanilla extract and melted butter and knead into a smooth dough.
Refrigerate the dough for at least 2 hours, when it's colder you can roll it out easier because it is less sticky.
Heat oil in a dutch oven or other heavy-bottomed pans.
Dust the counter and the rolling pin with flour and knead the dough briefly.
Roll out the dough into a large slice that is neither too thin nor too thick. About 3 mm.
Use a cookie cutter in the shape of a heart and create hearts from the dough. Fry it directly in the hot oil, do not add too many hearts at the same time.
When the bottom has turned brown, flip the beignets and fry the other side until both sides are beautifully golden brown.
Transfer the beignets to a plate lined with paper towels to remove any excess oil. Repeat for the rest of the dough.
Right before serving, sprinkle with powdered sugar, enjoy!
