Viennetta is a regular feature of many families' festive celebrations. A deliciously light and creamy vanilla ice cream with layers of crisp chocolate, it's the perfect dessert.
You can use ready-made vanilla ice cream for the ice cream layers, but making it yourself from whipping cream, egg whites and condensed milk is easy; you don't even need an ice cream machine.
An easy, festive dessert which you can fully prepare in advance. This means no more work for you at the end of Christmas dinner, and all the more time to enjoy the conversation at the table with your guests.

Preparation – 15 minutes
Make a bain-marie by heating a layer of water in a pan. Put a suitably-sized bowl on top and break the chocolate into pieces in it. Melt the chocolate slowly.
Draw 4 rectangles, the size of the loaf tin, on baking parchment then turn over the paper. Spread a layer of melted chocolate into the rectangles, making sure they are not too thick.
Let the chocolate set and harden completely by putting them in the freezer or fridge.

Making your own Viennetta – 30 minutes + waiting time
Whip the cream until it is quite stiff, but not too stiff. Fold in the condensed milk, along with 2 teaspoons of vanilla extract.
Beat the egg whites until stiff and fold into the whipped cream until smooth.

Line the loaf tin with cling film and, optionally, a strip of baking parchment. This will make it easier to remove the Viennetta from the tin.
Add a layer of the whipped cream mixture, and top it with a slice of chocolate.
Continue building the layers, and finish with a layer of ice cream. Smooth the top and put the ice cream cake in the freezer for around 4 hours.
There will be some whipped cream mixture left; place this in a piping bag with a star-shaped nozzle and put it in the fridge.


Remove the ice cream cake from the loaf tin and place it on a (rectangular) plate. Use the whipped cream mixture in the piping bag to decorate the ice cream cake.
You can make little waves for this, starting with the side of the ice cream cake. Put the ice cream cake back in the freezer.


Garnish the Viennetta with a little cocoa powder and serve in slices. It's easiest to cut the Viennetta with a warm knife. Enjoy!
