Make a honey and mustard dressing in a large bowl by mixing 1 tablespoon mustard, 1 tablespoon honey and 2 tablespoons crème fraîche.
Peel and fairly finely grate the carrots and kohlrabi. Wash the cucumber, remove the cores from the apples, then finely grate the apples and cucumber too.
Immediately mix everything with the dressing, in a large bowl, to avoid discolouration. Chop a small bunch of chives and add them, along with 2 tablespoons of sultanas. and season the salad with salt and pepper.
The kohlrabi salad is best when the flavours have been allowed to develop for a few hours. Enjoy your meal!
What is kohlrabi?
Kohlrabi is the tuber of a cabbage plant, which grows above ground. Raw kohlrabi is best described in terms of flavour as a mix of radish, hazelnut and chestnut.
Usually, kohlrabi are green, but there are also beautiful purple skinned kohlrabi. Both colours of kohlrabi are white inside.
Can I leave out the sultanas?
If you don't like sultanas, you can omit them completely. However, the sweet taste of the sultanas is a perfect balance to the slightly peppery kohlrabi. You could add some finely chopped dried apricots to the kohlrabi salad, if you like.
